Mini Fruit Tacos with Strawberry Compote

Valentine Day is around the corner.

Make your Valentine special with these Mini fruit tacos with Strawberry Compote.

I prepared these on Monday morning which I think is perfect to beat your monday blues!!😁 and all it takes few ingredients to make these yummy tacos with strawberry compote.

Let’s get started with the recipe.

Preparation Time 20 minutes and (overnight for tacos coating with chocolate) , Cooking Time – 10 minutes, Servings – 6

Ingredients :

Hard shell tacos – 6,

Melted Chocolate 50 ml,

Chopped Strawberry- 20 gms,

Chopped Bananas- 2,

***Strawberry Compote***

Chopped Strawberries -200 gms.

Sugar – 2 tbsp

***For garnishing***

few mint leaves,

or chocolate sauce

Method-

  1. Coat the tacos with melted chocolate and freeze overnight, so the chocolate forms a layer on the tacos.
  2. Prepare compote by adding chopped strawberries and sugar, stir well for 10-12 minutes occasionally mashing fruit to combine.
  3. Turn off the flame and let it cool completely.
  4. Layer it with Strawberry compote, then add chopped bananas,strawberries or any other fruits of your choice.
  5. Garnish it with mint leaves ( I have garnished it with stem of strawberry) or chocolate sauce.

These fruit tacos can be made in many varieties. Feel free to add whatever fruit sounds best to you and create a riot of colours with fruits.

Orange and Cherry Biscottis

Orange and Cherry Biscottis 🍊🍒🍪

Biscotti also known as biscotto. The word originates from medieval Latin “biscoctus” meaning “twice cooked”.

Impromptu baking leads to scrumptious Orange and Cherry Biscottis which is super easy to prepare and stays fresh for a month and can be frozen.

Preparation Time-  15 minutes, Cooking Time- 1 hour, Servings- 2

Ingredients

2 cup all purpose flour,

2 cup powdered sugar,

1 1/2 cup milk,

1 teaspoon baking powder,

1 orange zest coarsely grated, 🍊

1 cup chopped cherry 🍒

1 cup  chopped raisins,

1 cup crushed almonds,

Method-

1.In a large bowl, add flour baking powder and sugar by mixing it well. Knead the dough by adding milk on regular interval firstly it will be little dry,keep kneading until no patches remain.Add the fruits ( I have used coarsely grated orange zest and chopped cherry) and nuts knead it properly and evenly distribute.

2. Place the dough on the lightly floured surface and divide it into 6 pieces. Roll it into round shapes. Place three on each tray with well spaced apart. Bake for 25 minutes until the dough has risen and spreads, feeling firm. The biscottis will look little pale. Remove from the oven and transfer it to wire rack for few minutes until cool enough to handle.

3. Bake for another 15 minutes turn over and then bake again until dry and golden. Transfer into wire rack and let it cool for a while. Store it in airtight container as it stays fresh for a month.

Sugarless Walnut Fudge

I am totally in love with the chocolate,🍫 well being a chocolatier ( The Sweet Life Chocolates ) are big perks in itself. 🍫I always look forward to include it in my diet in a healthy way. Me and my husband are the biggest chocolate freaks!!🍫

Today I came up with this genius idea. 🙇🏼‍♀️

There is no sugar…really!!😇

Preparation Time- 5 minutes, Cooking Time/Cooling Time- 30 minutes. Servings – 2.

Ingredients-

Cocoa Powder- 2 Cups,

Walnuts- 1 1/2 Cups,

Vanilla Extract- 1 teaspoon,

Butter- 2 tablespoon,

Desiccated Coconut- 1/2 Cup.

Method –

  1. In a bowl, mix well cocoa powder, desiccated coconut powder, vanilla extract, walnuts and melted butter.
  2. Spread the mixture and garnish it with walnuts on the top as well on parchment or butter paper into a dish of your choice and chill it in fridge for 30 minutes.
  3. Once set, cut into desired shapes and serve.
  4. Store it in air tight container in the fridge.

Red Chilli Pepper Jam

Red Chilli Pepper Jam.

A beautiful blend of flavours! It’s sweet,little tangy and spicy.No preservatives or artificial colors. It can be spread on toast,mix it with hung curd to make a beautiful dip or as salad dressing. In short, a versatile condiment.

Preparation Time- 15 minutes, Cooking Time- 2 hours 15 minutes, Servings- 2 jars.

Ingredients

250 gms red hot chilli pepper halved and de-seeded (without seeds,mirche ke achar wali badi mirchi),

500 gms red  and yellow bell peppers,halved and de-seeded,

2 cups Apple Cider Vinegar,

2 cups Sugar.

Method-

  1. In a deep pan, combine the chili peppers, red bell peppers, and apple cider vinegar. Cover the pan with a lid and cook for about 20 minutes or until the peppers have softened.
  2. In a strainer, drain the pepper mixture and with the back of a wooden spoon (if not wooden spoon you can use spatula also), press on the peppers to extract any excess liquid.
  3. Transfer the peppers into a blender/mixer and make a puree.
  4. Press the puree through a sieve to remove the pepper skin and discard it.
  5. In another pan on a medium heat, add the pepper puree and add the sugar a little at a time and mix until the sugar has dissolved.
  6. Continue to cook the mixture for next 40 minutes, stirring occasionally.
  7. Remove from the heat when the mixture resembles a jam texture. Allow to cool and transfer into jars.

Dahi Bhindi – Okra/Lady Finger with Yogurt Curry

Dahi Bhindi/Okra/Lady Finger with Yogurt Curry

Preparation Time- 10 minutes, Cooking Time- 20 minutes, Servings- 2

Ingredients-

  • 20 medium size okra (bhindi)
  • 3 Tbsp oil
  • 1/2 tsp cumin seeds (jeera)
  • 1/4 tsp mustard seeds (rai)
  • 1 tsp (hing)
  • 1 Tbsp besan (gram flour)
  • 2 tsp coriander powder
  • 1 tsp Red Chili Powder
  • 1/4 tsp Turmeric Powder
  • 1 cup yogurt (dahi, curd)
  • 1 cup water (approximately)
  • 1/2 tsp salt

Method-

  1. Wash and pat dry the okra and cut both ends, and cut them in about 1 inch pieces.
  2. Heat 2 tablespoons of oil in a frying pan over medium heat and stir fry the okra till they are soft for around 5 minutes.
  3. Remove it in a bowl and use the same pan for further process.
  4. Heat 1 teaspoon oil on medium heat.As soon as the oil is hot,add cumin seeds,mustard seeds and hing.As it starts to splutter turn the flame to low.
  5. Add the besan and stir fry for about 1 minute until it has light aroma, and is golden brown in color as it will give the thickness to the gravy.
  6. Add yogurt, turmeric, chili powder and coriander powder. Mix it well. And cook until the spice mix come together. Stir it for 3 minutes.
  7. Add water and salt,let it simmer for 5 minutes on low flame.
  8. This can be best relished with jeera rice,fulka roti,chapati or paratha (Indian flat breads).
