Rajgira Cookies

Coconut powder – 2 tbsp, Rajgira atta -1 cup, Powdered sugar-4 tbsp,baking powder – 1/2 tsp,baking soda- 1/2 tsp, milk -4 tbsp and ghee 1 tbsp. For Garnishing few pistas.

Method-

Add coconut powder,rajgira atta,powered sugar,baking soda,baking powder and ghee in a bowl and mix well.

Add little milk turn by turn to see the texture of the dough. It should be soft and not runny. In the meanwhile preheat oven for 5 minutes at 175*C.

Let it rest for 5 minutes and make balls and press them and place pistas.

Grease the baking tray with ghee and place the cookies.

Bake it for 10 minutes at 180*C.

Once done let it cool.

Rajgira cookies are ready.

Homemade Cream Cheese

Step by Step with pictures

Homemade Cream Cheese

All we need is 750 ml full cream milk,3 tbsp lemon juice and a pinch of salt.

Prepration Time 40 minutes, Cooking Time -20 minutes.

Method
Boil 750 ml full cream milk in a heavy base pan.

Low the flame and add 3 tbsp lemon juice. Keep stirring till the milk starts curdling(doodh fatna).

Switch off the flame. Place the colander and lay muslin cloth on the bowl. Squeeze the batter tightly and don’t throw away the whey water.

Add some water. Rest for 20 minutes.

Open the cloth and put it in a mixie jar,add a pinch of salt.
Add 1 tbsp whey water,grind again and TADA your cream cheese is ready.

Banana Walnut Cake

Banana Walnut Cake.On a baking spree in quarantine times. And bringing out my baker’s mode in lockdown days.💁🙄Well this time I baked very simple cake with easily available ingredients at home. Banana Walnut Cake comprising of 2 ripe bananas,1 cup wheat flour,1/4 cup sugar,milk – 1/2 cup, walnuts-1/2 cup,raisins- 1/2 cup,vanilla extract 1 teaspoon,baking powder- 1 tablespoon,baking soda- 1 /2 tsp and cocoa powder 1/2 cup.It became an instant hit within my family. You can give it a try and bake for kids and your family. You can even involve your kids as it will be a fun activity to bake a cake.💁Preparation time – 10 mins,Cooking time- 20 mins, Servings-3Method-

  1. Add mashed bananas, wheat flour,powdered sugar, crushed walnuts,raisins,baking powder,baking soda,vanilla extract and cocoa powder and mix well. Now pour milk little by little to form a good batter, the batter should be runny it should be thick.
  2. In the meantime, preheat the oven at 180*C
  3. Top it with crushed walnuts or you can chose your own toppings.
  4. Bake it for 20 minutes on 200*C.
  5. To see if it has been baked, prick it with tooth pick. If it’s still unbaked, bake it for another 5-7 minutes and if done remove it and let it cool.
  6. Relish it with hot milk or coffee.

Orange and Cherry Biscottis

Orange and Cherry Biscottis 🍊🍒🍪

Biscotti also known as biscotto. The word originates from medieval Latin “biscoctus” meaning “twice cooked”.

Impromptu baking leads to scrumptious Orange and Cherry Biscottis which is super easy to prepare and stays fresh for a month and can be frozen.

Preparation Time-  15 minutes, Cooking Time- 1 hour, Servings- 2

Ingredients

2 cup all purpose flour,

2 cup powdered sugar,

1 1/2 cup milk,

1 teaspoon baking powder,

1 orange zest coarsely grated, 🍊

1 cup chopped cherry 🍒

1 cup  chopped raisins,

1 cup crushed almonds,

Method-

1.In a large bowl, add flour baking powder and sugar by mixing it well. Knead the dough by adding milk on regular interval firstly it will be little dry,keep kneading until no patches remain.Add the fruits ( I have used coarsely grated orange zest and chopped cherry) and nuts knead it properly and evenly distribute.

2. Place the dough on the lightly floured surface and divide it into 6 pieces. Roll it into round shapes. Place three on each tray with well spaced apart. Bake for 25 minutes until the dough has risen and spreads, feeling firm. The biscottis will look little pale. Remove from the oven and transfer it to wire rack for few minutes until cool enough to handle.

3. Bake for another 15 minutes turn over and then bake again until dry and golden. Transfer into wire rack and let it cool for a while. Store it in airtight container as it stays fresh for a month.

Kolach/Kolache

Kolach/Kolache

Kolach is a type of pastry that holds a dollop of fruit surrounded by puffy cushion of flexible dough. Originated from Czechoslovakia, and originally  Old Slavonic word “kolo” means “circle”,”wheel”.

Let’s get started!

Preparation Time- 30 minutes, Cook Time- 20 minutes, Ready In- 2 hours 20 minutes. Servings-2.

Ingredients-

All purpose flour (Maida) -5 cups,

Butter- 1 cup,

Sugar- 1/2 cup,

Salt- 1  1/2  teaspoons,

Milk- 2 1/2 cups,

Lemon Extract- 1/2 tsp,

Fruit preserves- 1/2 cup,

Active dry yeast- 1 1/2 tablespoons,

Method-

  1. Whisk butter and sugar together in a bowl. Stir in salt,hot milk and lemon extract together.
  2. When lukewarm,add yeast to the mixture.Let stand for 5 minutes,
  3. Add flour by whisking it well and knead it in bowl.
  4. Let it rise for an hour.
  5. Cut off small balls of dough. Roll into rounds in your hands, and place on greased cookie sheets 2 inches apart. Let rise 15 minutes.
  6. Make a deep depression with your thracks.umb lightly into the center of each roll.Fill it with fruit preserve of your choice. I have used here blueberry,raspberry and strawberry preserve.
  7. Bake at 180*C for 20 minutes.Keep checking in between until golden brown.
  8. Once done let it cool down little on wire rack.Serve warm.

This is my first try and haven’t eaten kolache before, and I enjoyed it while baking and it turned out to be delicious.

Instant Coffee Cookies

Instant Coffee Cookies

Preparation Time:5 mins, Cooking Time: 5 mins, Servings-4.

Ingredients

Biscuit Powder- 1 cup

Cocoa powder-1/2 cup,

Butter- 1/2 cup,

Coffee -1/2 tsp.

Method:

Firstly, lets melt the butter in the pan. Add biscuit powder and cocoa powder in the pan and mix it well. Now sprinkle 1/2 tsp coffee and take it out from the stove.
