Preparation Time 10 minutes, Cooking Time 5 minutes, Servings 2

For Phalari Bhel

Ingredients

2 boiled and mashed potatoes,

Deep fried peanuts -1/4 cup,

Chopped green chillies 4-5,

Fried and crushed curry leaves,

Lemon juice -1 tbsp,

Jeera powder- 2 tsp,

Sendha namak(rock salt) as per taste

Groundnut oil or ghee (used for fast) for deep frying peanuts or you can shallow fry also. I shallow fried them.

For garnishing

Fried and crushed curry leaves,

Store bought farali chivda,(you can make it at home as well)

Method

1. Take a kadhai or deep pan. Add oil and shallow fry the peanuts, once done remove it.

2. In a bowl, take mashed potatoes,chopped green chillies,peanuts,jeera powder,lemon juice,sendha namak and mix well.

3. Garnish it with crushed curry leaves and farali chivda.

4.Enjoy with hot cuppa of coffee or tea.

Pyaj ke Pakode / Onion Fritters

Monsoon Special Pyaj ke Pakode/ Onion Fritters

Very easy recipe,with some different ingredients and perfect for rainy season.

Ingredients

Besan – 2 tablespoon,3 finely sliced onions,5 finely sliced green chillies from middle,chopped coriander leaves,1 tsp turmeric powder,1 tsp red chilli powder,salt to taste,1tsp coriander seeds (saabot dhaniya),1tsp ajwain(carom seeds) and 1 tsp oil (hot oil to mix in batter).

Method

1. First chop off onions in a finely sliced way, and in a container add salt and cover it with lid. Let it rest for 5 mins.

2.Now add thinly sliced green chillies,chopped coriander leaves,turmeric powder, red chilli powder, ajwain,2 tbsp besan and coriander seeds,mix it well finely with your hands. Avoid using spoon as mixing with hands will give good taste. Now here we have to put 1 tsp of hot oil in batter and give it a good mix. Be careful not to burn your hands.🙄😀

3. In a pan, heat oil and put the batter in small quantities, by making sure that we don’t want to make it like big size balls, but small batches of onion fritters.( Khila khila types).

4. Your easy peasy onion fritters are ready to be served. It’s good to go with spicy green chutney and chai.

Rajgira /Amaranth Cookies

Rajgira Cookies

Coconut powder – 2 tbsp, Rajgira atta -1 cup, Powdered sugar-4 tbsp,baking powder – 1/2 tsp,baking soda- 1/2 tsp, milk -4 tbsp and ghee 1 tbsp. For Garnishing few pistas.

Method-

Add coconut powder,rajgira atta,powered sugar,baking soda,baking powder and ghee in a bowl and mix well.

Add little milk turn by turn to see the texture of the dough. It should be soft and not runny. In the meanwhile preheat oven for 5 minutes at 175*C.

Let it rest for 5 minutes and make balls and press them and place pistas.

Grease the baking tray with ghee and place the cookies.

Bake it for 10 minutes at 180*C.

Once done let it cool.

Rajgira cookies are ready.

Homemade Cheeselings

Craving for cheese?

This easy homemade cheeselings are perfect for snacks on the go. They are light brown and crispy fried. These mouth melting cheeselings are innovative and comforting.

All it takes is 5 ingredients i.e

All purpose flour-1 cup, melted butter – 2tbsp, salt-1 /2 tsp, grated cheese – 1/2 cup and milk – 4 tsp for kneading dough

Method

  1. In a bowl mix all the ingredients and add milk little by little to form a soft dough.
  2. Once done cover it with wet muslin cloth.
  3. Uncover it and knead a little.
  4. Take a big part from the dough and roll it very thin with rolling pin/belan.
  5. Use a pizza cutter or knife and cut it into thin stripes.Cut it horizontally
  6. Drop it into hot oil.
  7. Fry on low flame until light brown.
  8. Cheeselings are ready to be served. Best enjoyed with chai or hot chocolate.

Potato Toffee Samosa

An Ode to Eternal Samosa….

Potato Toffee Samosa.

Preparation Time -30 minutes,Cooking Time – 10-15 minutes, Servings 3

Ingredients

For the dough

All purpose flour ( maida- 1 cup),

Suji- 2 tbsp,

Ajwain(carom seeds), 1 tbsp,

Oil- 2 tbsp,

Salt as per taste and

Water as required for kneading.

For filling

2 potatoes boiled and mashed,

Besan – 2 tbsp,

Suji – 1/4 cup,

Chopped onions-1/4 cup,

Green chillies -3,

Jeera – 1 tsp,

Chat masala-1 tsp,

Salt as per taste.

Method

  1. Add maida,suji,oil and salt, mix well, it should be binded well.Knead the dough as water needed.
  2. Make a dough and rest it for half an hour by covering it with wet muslin cloth as the dough should not become dry.
  3. For filling – In a bowl add mashed potatoes,besan,suji,onion,green chillies,chat masala,jeera and salt. Mix well and keep it aside.
  4. Now take the dough and make small balls, press it with rolling pin (belan) and make three lines with knife.
  5. Take the potato filling and make oval shape.Place it in the mid of chapati and press from both ends by tightly securing the filling.Wrap it in the shape of toffee.
  6. Heat oil in a pan, deep fry potato toffee samosa until golden brown.
  7. Relish it with chutney or any dip of your choice.

French Gratin Dauphinois

Well well well it’s a French cuisine debut on my blog. 💁I made Gratin Dauphinois and trust me it’s tastes heavenly. 😋😇

Basically it’s a dish of sliced potatoes baked with milk,heavy cream and heavenly cheese.😋 The creaminess and cheesiness made it more scrumptious.😋😋

Let’s get started without any delay.

Preparation Time – 20 minutes, Cooking time – 40 minutes, Servings -3

Ingredients-

2 potatoes peeled and sliced in round shape,

1 cup milk,

1/2 cup heavy cream,

Few garlic pods chopped,

Salt to taste,

Black pepper 1 tbsp,

Nutmeg- 1 pinch.

Cheese slices I used Amul brand for this.

Method-

  1. In a large pan, add potatoes,milk and garlic and let it simmer for a while.
  2. Let it simmer for a 15 minutes once they start turn into tender.It shouldn’t be overcooked as they should hold their shape when we will be layering it.
  3. Preheat oven at 180*C .
  4. Drain the milk from the pan and add the heavy cream, salt,pepper and nutmeg in the hot potatoes.
  5. Now add the milk back to the mixture.
  6. Heat the cream mixture on a very little simmer for 10-15 minutes till the potatoes are soft,make sure it doesn’t break or fall apart.
  7. Line up a butter greased tray and place the potatoes carefully without breaking it with a help of spoon.
  8. Cover the potatoes with cream.
  9. Lay over the cheese slices over the potatoes.
  10. Bake it for 25 minutes until golden brown and cream soaked up.

Gratin Dauphinois is ready to be served.🥔🧀🥛

Bathua Puri and Bathua ka Raita

Bathua leaves or Chenopodium album are filled with many nutritional qualities as well as rich in amino acid which plays an important role in cell formation.

India is one of the largest cultivators of Bathua. These dark, leafy greens are also related to amaranth, spinach and beetroot.

Preparation Time – 30 minutes, Cooking Time – 20 minutes, Servings – 6.

Ingredients

Bathua Saag paste- 1 kg (for puri and raita)

For Bathua Puri

Wheat flour – 6 cups,

Bathua paste- 6 cups

Haldi powder- 2 tsp,

Red chilli powder -2 tsp,

Cumin Seeds- 1 tsp,

Fennel seeds -1 tsp,

Few Shredded Ginger pcs,

A pinch of hing (asafoetida),

Salt to taste,

Oil -2 tbsp

For Bathua Raita

Bathua saag paste -2 cups

Curd 4 cups,

Cumin Seeds -2 tbsp

Chilli powder -1 tbsp

Sugar – 1 tbsp,

Salt to taste

Bathua Paste– heat some water in the pressure cooker.Add bathua leaves and let it boil till the bathua softens. Strain out the water and let the bathua cool. Blend it to a soft paste.

Knead the dough

In a large bowl take 2 cups whole wheat flour. Add the bathua paste, cumin seeds,fennel seeds,turmeric powder,red chilli powder, small shredded pieces of ginger, salt to taste, a pinch of asafoetida and 2 tbsp hot oil.

Make a semisoft dough as you won’t need water as bathua paste itself is wet and dough will be binded with the water itself.

Let the dough rest for good 5-7 minutes.

Divide the dough into 16-20 portions,roll them and fry the puri.

Bathua puri is ready to be served with Bathua Raita.

For Bathua Raita

Take a bowl and pour curd in it. Mix the curd using a hand mixer. Add the bathua paste in it and blend well.

Now, mix cumin powder, salt and chilli powder and mix again. Refrigerate for an hour. Best relished with Bathua Puri or Bathua Paratha.

Cheese Potato Pancakes

Winters and hot pancakes! What a lethal combination!! Impromptu plan to make these crispy and hot pancakes on Sunday morning.

These pancakes are crispy outside and gooey inside.These beauties are the best option for kids party or as evening snacks as well.

Preparation Time: 10 minutes , Cooking Time : 25 minutes , Servings: 4.

Ingredients

8 potatoes, peeled and grated,

1/2 cup Cheddar cheese,

1/2 cup  Parmesan cheese,

Chopped Spring onions- 3 ,

1/2 tsp garlic powder,

1/4 cup all-purpose flour,

1 tsp  salt,

2 tbsp black pepper,

1/4 cup (50g) oil, for frying,

Dipping sauce

1/2 cup (120g) sour cream

1 tbsp (20g) chili garlic sauce,

1 tbsp red chilli flakes.

Method:-

  1. Grate potatoes and squeeze as much liquid as possible.
  2. Place the potatoes into a large bowl. Add grated cheese, chopped spring onion, garlic powder,black pepper and salt. Mix it well.
  3. Heat oil on a non stick pan. Take equal amount of potato mixture and add to the pan. Use the back of a spoon to flatten the patties. Cook 4-5 patties at a time.
  4. Let it cook for 4 minutes until golden brown.
  5. Repeat it with remaining potato mixture.
  6. Transfer the pancakes to a plate lined with tissue paper to remove excess oil.
  7. Prepare the dipping sauce by mixing sour cream,red chilli flakes and chilli sauce.
  8. Serve it when warm with the chilli flakes dip.

Mini Fruit Tacos with Strawberry Compote

Valentine Day is around the corner.

Make your Valentine special with these Mini fruit tacos with Strawberry Compote.

I prepared these on Monday morning which I think is perfect to beat your monday blues!!😁 and all it takes few ingredients to make these yummy tacos with strawberry compote.

Let’s get started with the recipe.

Preparation Time 20 minutes and (overnight for tacos coating with chocolate) , Cooking Time – 10 minutes, Servings – 6

Ingredients :

Hard shell tacos – 6,

Melted Chocolate 50 ml,

Chopped Strawberry- 20 gms,

Chopped Bananas- 2,

***Strawberry Compote***

Chopped Strawberries -200 gms.

Sugar – 2 tbsp

***For garnishing***

few mint leaves,

or chocolate sauce

Method-

  1. Coat the tacos with melted chocolate and freeze overnight, so the chocolate forms a layer on the tacos.
  2. Prepare compote by adding chopped strawberries and sugar, stir well for 10-12 minutes occasionally mashing fruit to combine.
  3. Turn off the flame and let it cool completely.
  4. Layer it with Strawberry compote, then add chopped bananas,strawberries or any other fruits of your choice.
  5. Garnish it with mint leaves ( I have garnished it with stem of strawberry) or chocolate sauce.

These fruit tacos can be made in many varieties. Feel free to add whatever fruit sounds best to you and create a riot of colours with fruits.
