Mulberry Vanilla Layered Bundt Cake

Easter Special! 🐣

Finally got into the bandwagon in preparing of bundt cakes. But this version of cake is different with my kind of taste and i.e Mulberry And Vanilla. 🍮

It’s spongy,soft and the texture is just lovely.😍

Let’s get started with this scrumptious cake.

Preparing Time-5 minutes, Cooking Time – 15 minutes, Servings- 2

Ingredients –

Mulberry Pulp – 1 cup,

All purpose flour- 1 cup,

Sugar – 1/2 cup,

Butter- 1/2 cup,

Vanilla Essence- 1 tsp,

Baking Powder- 1 tsp,

Baking Soda- 1 tsp,

Milk- 1 cup.

Method-

  1. Preheat the oven at 180*C.
  2. In a bowl beat the butter, powdered sugar and vanilla essence till light and fluffy.
  3. Sift together flour,baking powder and baking soda.
  4. Add the milk, mix with a spatula and then fold it in the flour.
  5. Grease the pan with butter/ghee.
  6. Pour the batter into the pan till 3/4th full.
  7. Bake for 15 minutes or till a skewer/knife point/toothpick when inserted in the centre of the cake comes out clean.
  8. Let it cool.
  9. In the mean time you can prepare the mulberry pulp. In a pan add, 1/2 cup lukewarm water and 10-15 mulberries.
  10. Stir it unless it comes out like pulp.Turn off the flame and let it cool.
  11. Pour the mulberry pulp in the centre of the cake bundt.
  12. Freeze it for 10 minutes.
  13. Dust the powdered sugar with sift and decorate with mint leaves.

Mulberry Vanilla Layered Bundt Cake is ready. It’s ideal for kids especially in summers, birthday parties, get together and reunions.🥂

Sugarless Walnut Fudge

I am totally in love with the chocolate,🍫 well being a chocolatier ( The Sweet Life Chocolates ) are big perks in itself. 🍫I always look forward to include it in my diet in a healthy way. Me and my husband are the biggest chocolate freaks!!🍫

Today I came up with this genius idea. 🙇🏼‍♀️

There is no sugar…really!!😇

Let’s get started!!🙌🏼

Preparation Time- 5 minutes, Cooking Time/Cooling Time- 30 minutes. Servings – 2.

Ingredients-

Cocoa Powder- 2 Cups,

Walnuts- 1 1/2 Cups,

Vanilla Extract- 1 teaspoon,

Butter- 2 tablespoon,

Desiccated Coconut- 1/2 Cup.

Method –

  1. In a bowl, mix well cocoa powder, desiccated coconut powder, vanilla extract, walnuts and melted butter.
  2. Spread the mixture and garnish it with walnuts on the top as well on parchment or butter paper into a dish of your choice and chill it in fridge for 30 minutes.
  3. Once set, cut into desired shapes and serve.
  4. Store it in air tight container in the fridge.

Orange Velvet..!!?? Yes you heard it right. I tried these cupcakes on my birthday and trust me it came out spongy and delicious. My day just does not pass by baking or trying new recipes to satisfy my never ending weakness for sweets, cakes, cupcakes and chocolates. I have made these cupcakes without cream(upper layer).

So lets get started on this roller-coaster cupcake ride and put on your gloves and apron.

Preparation Time:5 minutes, Baking Time:10 minutes, Servings -2.

All we need is

Ingredients

Orange Velvet Mixture-1 cup,

All purpose flour (Maida)- 1 cup,

Baking powder-1 tsp,

Baking Soda – 1 pinch,

Curd- 2 cup,

Condensed Milk-1 cup,

Melted Butter- 1 cup,

Method:

Step 1: In a bowl,mix orange velvet mixture,all purpose flour,curd and melted butter.Stir it well until the butter is mixed properly.

Step 2: Add baking powder,baking soda and condensed milk, mix well and now combine the stirred batter.

Step 3: Grease the cupcake mould with ghee/butter,place your desired cupcake cover and pour the batter in the cupcake.

Step 4: Now bake the cupcakes at 180*C for 10 minutes.

Step 5: Remove these beauties from the oven,let them cool and you can top it with desired fruits. I have topped it with strawberries!

Orange is the New Black! Red Velvet Cakes are passe..So lets bake it and make it birthday special.

Preparation Time:5 minutes, Baking Time:10 minutes, Servings -2.

All we need is

Ingredients

Oranges-1, (We will use them as a slice)

Orange Velvet Mixture-1 cup,

All purpose flour (Maida)- 1 cup,

Baking powder-1 tsp,

Baking Soda – 1 pinch,

Curd- 2 cup,

Condensed Milk-1 cup,

Melted Butter- 1 cup,

Method:

Step 1: In a bowl,mix orange velvet mixture,all purpose flour,curd and melted butter.Stir it well until the butter is mixed properly.

Step 3: Grease the bakeware with butter and pour the batter. In between add sliced oranges and then again pour the batter, put sliced oranges and finally cover with batter. You have to do it twice.

Note:

As I am a vegetarian, I have used curd instead of eggs.

 

 

Banana Muffins

Banana Muffins:

Preparation Time: 5 mins, Cooking Time: 15 minutes, Servings: 4

Ingredients:

Bananas (Overripe)-4,

Milk-1 cup,

All purpose flour-1 cup,

Sugar-1 cup,

Baking Powder- 1 tsp,

Baking Soda-1 tsp,

Vanilla Essence-1 tsp,

Sunflower seeds-1 tsp,

Flax seeds-1 tsp,

Salt- A pinch.

Method:

Add 3-4 mashed bananas(overripped), all purpose flour, sugar, Salt, cinnamon, baking powder, baking soda,flax seed sunflower seeds, milk & vanilla essence & pour it in a bowl.

Pour it in cupcakes shape cup. Bake it in for 15 mins at 180*C.

Instant Coffee Cookies

Instant Coffee Cookies

Preparation Time:5 mins, Cooking Time: 5 mins, Servings-4.

Ingredients

Biscuit Powder- 1 cup

Cocoa powder-1/2 cup,

Butter- 1/2 cup,

Coffee -1/2 tsp.

Method:

Firstly, lets melt the butter in the pan. Add biscuit powder and cocoa powder in the pan and mix it well. Now sprinkle 1/2 tsp coffee and take it out from the stove.

Let it cool and then make balls.

Preparation Time: 5-7 minutes, Cooking Time: 15 minutes, Serving- 4.

Ingredients:

Biscuit Powder- 1 cup,

Bananas-2,

Cocoa Powder-2 tbsp,

White Chocolate

Honey-For garnishing.

Method:

Firstly, mash the bananas and add biscuit powder,cocoa powder in a bowl. Make a dough of it and make balls. Freeze it for 15 minutes.

In the meantime, we will melt the white chocolate  (compound) over it and put the freezed ball on the butter paper and chill until firm. Garnish it with honey.
