Pizza Cups

Pizza cups in appe pan is yummy kids snacks recipe and for your next party as well.These pizza cups are made without oven in 15 minutes. I am game for pizza at any hour of the day! 🍕😋Let’s start without taking any more time!!

Ingredients

  • Finely chopped bell pepper or capsicum: 1/4 cup
  • Fine chopped onions: 1/2 cup
  • Corn kernels: 1/2 cup
  • Chilly flakes: 1 tsp
  • Salt to taste
  • Pizza sauce or pasta sauce: 2 tbsp
  • Butter at room temperature
  • Pizza Seasoning -1 tsp
  • Some circular cover or lid to cut bread in circles
  • Bread slices( brown or white): 8
  • Pizza cheese or mozzarella cheese: 1 cup

Method-

1 . In a mixing bowl add bell peppers, onions and corns.

2 . Also add chilli flakes, pizza seasoning, very little salt and pizza sauce.3 . Mix the stuffing well and keep it aside.

4. Now take bread pieces and roll them thin with the help of rolling pin.

5. Put the lid on bread pieces and cut them circular with the help of sharp knife.

6. Now apply thin layer of butter on one side of the slices.

7. Take appam pan and put the bread slice butter side down in each hole of appam pan.

8. Now stuff the bread cups with vegetable stuffings.

9 . Top the cup with lots of grated cheese.

10 . Now put the appam pan of low flame.

11 . Cover the appam pan fully with some cover or lid.

12. Cook the pizza cups till they are crisp and cheese melts.13 . Pizza cups are ready to serve. Serve them hot and crisp.

Spinach Cigar/Spinach Roll

Winters are gone and summers are here!! So planned to bid adieu to winters with this spinach starter…

Spinach Cigars /Spinach Rolls

This is easy peasy recipe and hardly takes anytime!! So let’s get started!!

All we need is

1 cup besan (gram flour)

1 bunch spinach
1/2 teaspoon turmeric powder

1 teaspoon red chilli powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

1 pinch Hing (Asafoetida)

1/2 teaspoon Ajwain (carom)

1 teaspoon garlic paste

1/2 teaspoon chat masala

Salt- to taste

Method-

  • In a bowl, mix all the ingredients and add water until it becomes thick batter.
  • Wash spinach leaves and let them dry.
  • Now spread the batter on leaves with the help of knife and roll it tightly so that it doesn’t tear up while deep frying
  • Now deep fry in hot oil and serve it with sauce or homemade chutney.

These mouth watering cigars are perfect for get-togethers, children, family reunion or when you are having friends at your place.

Navratri Special – Bharwa Lauki with Kadhi/Stuffed Bottle Gourd with Kadhi

Day 7!!

Bharwa Lauki with Kadhi is the newly added recipe in my collection, tried and tested and instantly approved by my husband with two thumbs-up. It can be relished during fasting and as a breakfast or evening snacks.

Let’s get started

Preparation Time- 10 minutes,Cooking Time- 20-30 minutes, Servings- 2.

Ingredints-

Lauki (Bottle Gourd) – 1 Medium,

Curd-  1 cup,

Amarnath(Rajgira) Flour-2 tbsp,

Boiled potatoes-2 tbsp,

Green chillies chopped-3,

Powdered Black pepper – 1 tsp,

Rock Salt-1 tbsp,

Groundnut Oil -to fry.

Method-

  1. Peel lauki,cut into roundels,and remove seeds from the centre to make hollow.
  2. In a bowl, add mashed potatoes,green chiilies and black pepper mix well,mashing lightly.
  3. Stuff the roundel centres with mashed potatoes batter.
  4. Heat a oil in a non stick pan, add cloves and cardamom for saute.Place bottle gourd(lauki) on the pan and cook till golden brown. Cover it with lid so that’s it is cooked at the earliest.
  5. Uncover and flip it the other side.
  6. To prepare kadhi, add curd,amarnath flour,salt and black pepper and mix well.
  7. Add 1/2 cup water, and whisk well to make a smooth batter.
  8.  Pour the curd batter in another non stick pan,cook it, stirring continuously till the mixture thickens.
  9. Put some of the kadhi in a serving plate,arrange stuffed bottle gourd roundels over it and serve it immediately.Serve the remaining kadhi as required.

Sabudana Khatti Meethi Namkeen- Pearl Tapioca (Sago)

Day 6!!

Sabudana Khatti Meethi Namkeen recipe is a delicious crunchy snack made with tapioca pearls(sago) which can be eaten during fasting and midnight munching too.

 
Ingredients
  • 1/2 cup Soaked Sabudana (overnight) (Tapioca Pearls)
  • 1 cup Roasted Peanuts,
  • 15-20 Almonds
  • Cooking oil , to fry
  • 1 teaspoon Rock Salt
  • 1 tablespoon Sugar , powdered
  • 1/2 teaspoon Whole Black Pepper 

Method-

1. In a pan heat some oil. Drop one pearl of sabudana in hot oil to test if it is heated optimally. If it rises instantly to the surface, the oil is ready to fry. Add sabudana to oil and let the sabudana fry and puff up for a couple of minutes without changing its colour. Remove sabudana on a plate lined with a paper towel to absorb extra oil. Similarly,fry the peanut but not over-fry.

2. Roast almonds and mix it with sabudana and peanuts.

3.Transfer it in a bowl, now add rock salt, powdered sugar and crushed black pepper.

4. Let it cool.Transfer it into air tight container.

Sabudana Khatti Meethi Namkeen can be relished along with tea,coffee or hot almond milk.

Rajgira Mathri/Amarnath Flour Chips

Day 5!

Preparation Time- 10 mins, Cooking Time- 5 mins,Serves- 4

Ingredients:

1 1/2 Cup Rajgira flour (Amarnath flour),

1 tsp Sendha namak(Rock Salt),

less than 1/4 cup water (approximately),

Groundnut oil for deep frying.

Method

1. In a bowl mix Amarnath flour, sendha namak and water till the dough is soft.

2. Cover the dough with wet muslin cloth for 15 minutes.

3. Divide the dough into small equal medium sized balls and roll it with rolling pin.

4. Prick it with fork and deep fry it.

5. Relish these Mathris with tea, coffee or hot almond milk.

Kuttu ke Atta ki Papdi Chat/Singhade Atta Ki Chat/Buckwheat Flour Chips

Bored of having potatoes,pumpkin and other common fasting foods? Let’s not delay it and start making kuttu ke atta ki papdi chat/buckwheat flour chips.

Preparation Time- 10 mins, Cooking Time- 5 minutes, Servings -2.

Ingredients-

For Papdis

Kuttu ka atta / Buckwheat Flour – 1 Cup
Jeera/Cumin Powder – 1/2 tsp
Sendha Namak/Rock Salt – to taste
Pepper Powder – 1/4 tsp ( optional )
Water – As needed
Oil for deep frying

For Toppings

Prepared Papdi – as needed
Chopped Boiled Potato as needed
Tamarind Chutney(Imli) – As needed
Curd – as needed

Method:

  1. In a bowl, mix all the ingredients listed for papdi,add water in small quantity i.e 1 tbsp and knead into soft dough. Cover it with wet muslin cloth and keep it aside for 15 mins.
  2. Divide dough into 2 parts,take one part of dough and roll into thin roti and cutting into desired shapes.
  3. Prick the papdi with fork at 4-5 places so that it doesn’t puff up while frying.
  4. Deep fry into hot oil in small batches until golden brown.
  5. Drain into kitchen towel.

For Toppings

 

In a plate arrange a few papdi,top it up with potato pieces,add 1 tsp of beaten curd with tamarind chutney before serving.

Fast Recipes-Rajgira Nankhatai / Rajgira Cookies/Amarnath Cookies/Fasting Menu for Navratri Festival

Welcome the auspicious nine day long festival of Navratri with this super easy and quick recipe for fast/vrat. Rajgira Nankhatai is perfect for dipping in your evening tea while you fast.This recipe was an instant hit and approved by my family.

Rajgira Nankhatai/Rajgira Cookies.

Preparation Time- 10 mins, Cooking Time- 20 mins,Serves- 15-20

Ingredients:

1 1/2 Cup Rajgira flour (Amarnath flour),

1/2 powdered sugar,

4 tbsp powdered cashew-nuts{kaju} and almonds,

1/2 tsp cardamom powder,

6 tbsp ghee,

1 pinch Sendha namak(Rock Salt),

less than 1/4 cup water (approximately),

For Garnishing

Chopped Pistachios.

Method:

  1. In a large bowl mix rajgira flour,powdered sugar,powdered cashew nut and almonds,cardamom powder and salt.
  2. Slowly pour the water in the bowl and knead well.Make sure that it is not tight dough.
  3. Mix everything together and cover the bowl,by refrigerating for 15 mins.
  4. Pre-heat the oven for 5 mins at 180’C.Place the parchment paper and remove the dough from fridge and make small equal size ball.
  5. Make a cross over each ball with a sharp knife which helps to release steam within.
  6. Bake at 180’c for 20 minutes.
  7. When done, take it out and let it cool on the tray on a wire stand.
  8. Garnish it with chopped pistachios.

 

Enjoy with tea or coffee!!
