Crackling Spinach

Crackling Spinach. This is one of the best spinach starters I ever had. This is very easy to make recipe ideal for parties, get-togethers and kids.

Preparation Time: 7-10 minutes, Cooking Time- 5 minutes, Servings- 4

Ingredients-

Spinach – 2 Bunches (Chopped)

Notes – Shred the spinach, wash it thoroughly with water and drain well. Spread it on a muslin cloth and allow it to dry completely.

Seasame Seeds- 2 tbsp,

Dry Red Chillies-2, (broken

Sugar-2 tsp,

Salt-1 pinch,

Chilli Flakes- 1 tbsp,

Oil- to deep fry

Method

Step 1 – Heat the oil in a broad non-stick pan and add sesame seeds.

Step 2 –  Add dry red chillies,chilli flakes, powdered sugar and salt.

 

Step 3- Heat the oil for deep-frying in a deep non-stick pan and place some of the spinach in a strainer.

Step 4 -Dip the strainer in the hot oil and deep-fry for approx. 2 to 3 minutes or till the spinach is crisp.

Step 5-  Remove from the strainer and drain it on an absorbent paper.

Step 6 – Pour it in the plate and add dry red chillies, chilli flakes,powdered sugar and salt. Mix well.

Step 7- Serve it in a plate/ bowls and relish.

Lagan Nu Custard – An Iconic Parsi Dessert!

Preparation Time – 5 minutes, Cooking Time- 1 hour, Servings- 4

Ingredients:

1.5 litres milk,

1 cup all purpose flour,
1/3 tin condensed milk,
300 gm sugar,
1/2 teaspoon cardamom and nutmeg,
1 tsp vanilla essence,
Handful of sliced almonds,cashews and raisins.

Method:

Step 1- Bring the milk to a boil in a large non-stick pan.

Step 2- Once the milk has boiled, remove from the heat and stir in the condensed milk & sugar. Cook over a slow fire. Now it is the time to taste the milk. If you feel you need more sugar, add some in. Keep stirring this for a good 15 minutes until sugar is melted, the milk sticky and ivory in colour. Remove from the gas and cool.

Step 3- In the meantime, in a steel bowl mix maida, vanilla, nutmeg and cardamom until frothy.

Step 4- Stir this mixture into the cooled milk. Once it’s all mixed, grease a large baking dish and pour the mixture in.

Step 5 -Put the dish in a pre-heated oven and bake until golden (atleast an hour on about 220 degrees celcius). Garnish with the nuts and put it back in the switched off oven.

Step 6 -Chill and serve – it tastes best the next day once the custard is set.

You can relish it in an individual glass or cups!!

 

Oats Muffins

Oats Muffins!! Let’s get started!!

Preparation Time: 5 mins, Cooking Time-5-7 minutes, Servings-2.

Ingredients:

Leftover Oats-3 cups,

Semolina/Rava – 1 cup,

Honey-1 tsp,

Chopped Dryfruits- 1/2 cup,

Apple -1 (chopped) or any fruits of your choice,

Cheese – Shredded or Stripes (Optional)

Method:

Step 1- Mix all the ingredients in a bowl. Grease it with butter/ghee and pour it in muffin tray.

Step 2- Bake at 180*C for 7 minutes.

Your oats muffins are ready. They are ideal and healthy for kids. Ideal for late night munching with hot cup of coffee.

 

Birthday Treat-Orange Velvet Cupcakes

WARNING You may get addicted after reading this recipe!

Orange Velvet..!!?? Yes you heard it right. I tried these cupcakes on my birthday and trust me it came out spongy and delicious. My day just does not pass by baking or trying new recipes to satisfy my never ending weakness for sweets, cakes, cupcakes and chocolates. I have made these cupcakes without cream(upper layer).

So lets get started on this roller-coaster cupcake ride and put on your gloves and apron.

Preparation Time:5 minutes, Baking Time:10 minutes, Servings -2.

All we need is

Ingredients

Orange Velvet Mixture-1 cup,

All purpose flour (Maida)- 1 cup,

Baking powder-1 tsp,

Baking Soda – 1 pinch,

Curd- 2 cup,

Condensed Milk-1 cup,

Melted Butter- 1 cup,

Method:

Step 1: In a bowl,mix orange velvet mixture,all purpose flour,curd and melted butter.Stir it well until the butter is mixed properly.

Step 2: Add baking powder,baking soda and condensed milk, mix well and now combine the stirred batter.

Step 3: Grease the cupcake mould with ghee/butter,place your desired cupcake cover and pour the batter in the cupcake.

Step 4: Now bake the cupcakes at 180*C for 10 minutes.

Step 5: Remove these beauties from the oven,let them cool and you can top it with desired fruits. I have topped it with strawberries!

Orange is the New Black! Red Velvet Cakes are passe..So lets bake it and make it birthday special.

Preparation Time:5 minutes, Baking Time:10 minutes, Servings -2.

All we need is

Ingredients

Oranges-1, (We will use them as a slice)

Orange Velvet Mixture-1 cup,

All purpose flour (Maida)- 1 cup,

Baking powder-1 tsp,

Baking Soda – 1 pinch,

Curd- 2 cup,

As I am a vegetarian, I have used curd instead of eggs.

 

 

Golden Curry

Golden Curry

Preparation Time: 10 mins, Cooking Time -10 minutes. Servings-4

Ingredients:

Baby Potatoes-8

For Saute-
Oil-1 tbsp,
Garam Masala-2 tsp,
Salt to taste

For Curry
Oil-1 tsp
Cumin seeds- 1 pinch
Tomato-1
Green chilli-1
Garam Masala-1 tsp,
Turmeric Powder-1 tsp,
Coriander powder-1 tsp,
Red Chilli powder-1 tsp

For Stuffing:
Few Makhanas,(foxnut or lotus seeds)
Few Almonds,
Few Raisins,
Small Elaichi (Cardamom)
Chopped Green Chilly – 1,
Salt to taste
Method:

Let’s first peel off potatoes skin and scoop out the inside of potatoes as well. Now pour 1 tsp oil in a pan and sauté potatoes with pinch of salt and red chilli powder. Keep stirring it for a while.
In the meantime, we will prepare the stuffing and for that we will need few cashew, raisins, makhana (fox nut),almonds and the remaining batter of potatoes.

Grind it in mixer, make a paste of it and stuff it in the sauted potatoes

Now take a pan, add 1 tsp of oil in a pan,1 bay leaf,3 cloves, cumin seeds and asafoetida (hing) -1 pinch. As soon as cumin seeds start spluttering put the paste of tomatoes, green chill,garam masala, turmeric powder, coriander powder and salt which has to be grinded in a mixer . As soon as oil starts leaving from the paste, put stuffed potatoes, cardamom powder and lukewarm water. Transfer the gravy into cooker on high flame after two big whistles and turn it in slow flame after one whistle. You can turn it off now.

Garnish it with ghee and bay leaf.

Serve it with hot naan,roti or paratha.

Pongal

Pongal also known as Makarsankranti and Uttarayan,the winter harvest festival is celebrated with fun and frolic throughout India. And its already weekend and winters are here. So I thought of preparing sweet pongal on this chilling Friday evening. Sharing this recipe with you all.

Preparation Time: 10 mins. Cooking Time: 20 minutes.

All we need is

Ingredients

  • ½ cup rice
  • 1/3 to ½ cup moong dal / pesara pappu
  • ½ cup powdered or grated jaggery or palm sugar (you can increase by 2 tbsp)
  • 1/8 tsp. green cardamom powder.
  • 2 to 3 tbsp. Ghee (you can reduce it to 1)
  • 1 tbsp. raisins
  • 1 to 2 tbsp. Cashews broken
  • 1 to 2 cloves (optional)

Method:
  1. Add moong dal / pesara pappu to a heavy bottom pan or pressure cooker and roast it till they turn fragrant
  2. Add rice to the same pan and wash them at least twice.
  3. Pour 2 ¼ cups of water. Cook till soft either in the pressure cooker for 2 whistles or in the pot.
  4. Pour ¼ cup water to grated jaggery. On a low flame stir and melt it. Keep this aside.
  5. When the pressure from the cooker is down, remove the lid and mash the rice.
Making sweet pongal
  1. Filter jaggery syrup to the cooked rice dal.
  2. Add green cardamom powder. Mix and cook on a medium flame till the jaggery syrup blends well with rice. It should begin to bubble up well. Off the stove.
  3. Heat a pan with ghee and add them to the rice. To the pan, add cashews, clove and fry till golden, off the stove and add raisins, Garnish sweet pongal with cashew nuts,raisins and cloves.
